Kale Salad with Potatoes & Pecan Dip


Of all the super healthy greens, kale is king. It is definitely one of the healthiest and most nutritious plant foods in existence. It is loaded with all sorts of beneficial compounds, some of which have powerful medicinal properties. There are many different types of kale. The leaves can be green or purple, and have either a smooth or curly shape. The most common type of kale is called curly kale, which has green and curly leaves and a hard, fibrous stem. I made this colorful salad for the christmas dinner I was invited to this year. The purple sweet potatoes give a beautiful color to it, while bringing a little sweetness to the more bitter taste of the kale. Toped with my homemade pecan dip, crunchy onions and sesame, this is heaven on a plate.


YOU NEED:

FOR 4 PLATES

1 whole organic kale

1 carrot

200g of sprouts (your choice)

10 cocktail tomatoes

2-3 organic purple sweet potatoes

juice of 3 lemons

1/2 bundle of basil

4 spoons of pecan butter

4 spoons of sesame

4 spoons of crunchy onions


THE MAKING:

Prepare a big bowl of warm water and add a spoon of turmeric powder

Cut the kale into slices

Peal the carrot and peal it with the carrot sealer in very thin slices, put aside

Cut the tomatoes into halfs

Take the basil leaves of the stem

Take the sprouts, kale slices and tomatoe halfs, the basil leaves and bath them in the turmeric water for about 15min to wash bacterias and pesticides away

Prepare a pot with water and bring it to boil, add the sweet potatoes with peal and boil them until they are soft

Take them out, let them cool down and peal them well

Take all the veggies out of the turmeric bath and rinse them again under cold water

Place the veggies and sprouts on one big platter or 4 individual bowls, add the carrot slices

Now slice the sweet potatoes and decorate them over the salad

Sprinkle lime juice and sesame on top

Add the crunchy onions and the pecan dip


TIP: this recipe is salt and oil free, simply because it is the way I like to eat my salads, yet if you like your salads with a lot of dressing you may add sesame oil and a few spoons of Tahini.
