Pina Colada Bliss Balls

Bliss balls are one of my favorite vegan treat, they are so easy, quick and also super cheap to make. The ingredients can be put together in any creative way. I used to love red-beet bliss balls covered in coconut flakes, but now I created a new recipe and changed from red-beet to pineapple, mixed with coconut flakes these bliss balls have a tropical touch. Too good to resist, but so what?! This treat is not only sugar-free but also gluten-free, a treat without regrets, pure bliss for belly and mouth. In case you don't find ripe pineapples where you life, take canned pineapples, wash them well to take the sugar off and use them instead.

YOU NEED

for apprx. 15 balls

150g gluten-free sprouted oats

100ml coconut milk

1 tablespoon coconut fat

1 tablespoon peanut butter

50g raisins

50g dates

50g fresh or canned pineapple slices

1 teaspoon cinnamon

50 coconut flakes

50g grounded , roasted peanuts


THE MAKING

Soak the oats and dates overnight in water, in two different bowls

The next day take the oats and start making the bliss ball dough

Add peanut butter, seedless and soaked dates, coconut milk, coconut fat and the raisins to the oats

Mix the dough with a spoon or your hands until everything is sticky and wet

Put the dough to the side and let it soak for a bit

Wash your hands

Peal the pineapple and cut it into small chunks

Take a soup plate and fill the coconut flakes and peanuts into it, put aside

Add the pineapple chunks to the oat-dough and mix everything well again

If the dough is too dry add coconut fat, if too wet add some oats

The dough should be chewy and sticky

Once the consistency seems right to you, start forming balls

You can use a spoon or your hands to roll and form the balls

Drop the balls into the soup plate filled with the crunchy peanuts and coconut flakes

Bath your balls in this mix, until they are evenly covered

Place the balls in a container and leave them in the fridge for two hours


TIP: as the balls stick together because of the coconut fat, make sure to serve them right from the fridge, otherwise they melt away and look very messy
